This week’s menu. Today is Meat Day: duck nachos, sliders and tots. Then a week of veg: stir fry, broccoli bean soup, chickpea cakes with asparagus and spinach, spaghetti with beans and spinach.

Oh, Smitten Kitchen, this is the breakfast sandwich to end all breakfast sandwiches.
We love turkey dinner. Love it. I usually get a turkey breast and make some oven stuffing, stovetop gravy, mashed potatoes and cranberries if I can find them. And one of the things we love about turkey dinner is all the turkey leftovers. And it’s almost worth having a whole turkey dinner so that you can make calzones.

I base these off of the Spinach Calzone from Artisan Bread in 5 Minutes a Day. I make a mixture of ricotta, egg, mozzarella, cubed up turkey and broccoli. I throw in a little bit of Italian seasoning and cook the broccoli with garlic. If I have it, I also add some swiss cheese to the mix.

But the biggest key to these calzones is this: pesto on the inside of the dough. When the dough has been rolled out I spread pesto around like pizza sauce before I dollop the filling and fold it over.
